They’re Fugue ‘n Awesome!
Big D has done it again! His Variation on a Theme of Baklava is a sensation. The reviews are in:
Fugue – In music, a fugue (pron.: /ˈfjuːɡ/ FEWG) is a contrapuntal compositional technique in two or more voices, built on a subject (theme) that is introduced at the beginning in imitation (repetition at different pitches) and recurs frequently in the course of the composition.
- 1 Egg
- 1 Cup Whole Milk
- ¼ Cup Butter
- ¼ Cup Vegetable Oil
- ½ Cup Sugar
- ½ tsp. Salt
- ¼ Oz. Envelope Active Dry Yeast
- 3 ½ Cup Flour
- Cooking Spray
- ½ Cup Pistachios
- 5 Tbsp. Butter
- 4 Tbsp. Honey
- ½ Cup Brown Sugar
- 2 tsp. Cinnamon
- Cooking Spray
- ¾ Cup Powdered Sugar
- ½ Tbsp. Vanilla
- 1 Tbsp. Milk
Set egg out to reach room temperature.
Place butter in mixing bowl and melt in microwave. Add milk to mixing bowl and put back in microwave for 30 seconds – 1 minute until warm to the touch (approximately 115 degrees). Add oil, sugar, and salt. Whisk egg in a small bowl and stir gradually into mixture. While mixture is still warm, add yeast and mix well. Let mixture sit for 5 min. – allowing yeast to bloom.
Add flour gradually. Big D used a wooden spoon and childhood angst. Those of you raised in a well adjusted home can use a mixer with a dough hook attachment. Mix until flour is fully incorporated.
Grease a large bowl with cooking spray or butter. Put dough in greased bowl. Cover with a damp towel. Put in warm place (like an oven – turned off!) Let rise for 4 hours.
Chop pistachios. Melt 4 Tbsp. butter in skillet/sauce pan on medium. Add nuts. Add 2 Tbsp. honey. Add ¼ cup brown sugar and melt. Add 2 tsp. cinnamon. Heat and mix well until a spreadable consistency is reached.
Roll out dough to approximately a 9 x 13 rectangle. Spread filling evenly over dough. Start rolling dough from end closest to you. Roll tightly into a 13” log. Pinch seam together. Transfer roll onto cutting board.
Grab a large iron skillet. Spray with non-stick spray. Melt 1 Tbsp. butter in bottom of pan. Coat bottom of pan with approximately 2 Tbsp. honey and ¼ cup brown sugar.
Cut rolls about 1 inch thick and arrange in skillet. Cover and let rise for 30 minutes. Bake uncovered at 375 degrees for approximately 20 minutes until golden brown. Serve immediately.
Mix powdered sugar, milk, and vanilla in small bowl. Spoon over rolls if desired.
